The date of birth is a field on the respective tiddlers. You can get
there by opening the extended toolbar and look at "fields". I have
installed a FieldsEditor plugin that allows you to edit the field
values without any forms.

However, you can use custom templates in edit mode to change field
values, if you wanted or you could use something like
"TaggedTemplateTweak" to trigger those special templates for tiddlers
with a given tag.
