As I understand it, the KaTeX plugin only supports the parts of LaTeX for
mathematical notation, and not the full functionality.
By the way, one wouldn’t generally need to use the <$latex> widget directly,
instead one can use the $$ syntax:
$$
f(x) = \int_{-\infty}^\infty\hat f(\xi)\,e^{2 \pi i \xi x}\,d\xi
$$
