Be careful not to over-insulate the oven -- it depends on a certain amount of heat flow to ambient to balance the heater. The stability of the heater control loop depends on having the correct amount of thermal resistance from oven to ambient (also, on the thermal resistance being distributed similarly to the original scheme).
