A small nitpick. UDP is connectionless, so you don't see connections,
you see requests.

Ideas how/why this is?

My ntpd was started 261 days ago, at system boot. The standard deamon
sticks with the timeservers it gets at startup, so if I were to use pool
servers, it would be servers in the pool 261 days ago. Now you are out
of the pool you should see a decay in NTP requests, when servers are
restarted.
