I have a similar problem, but with a twist.  I don't have a PhD yet.  And I'm not sure anyone would approve of me asking them to call me Master Kennedy! 
 
I'm young and it's weird for them to call me Ms., yet Professor Kennedy is not accurate.  Instructor Kennedy??  I can't remember what I told them at the beginning of the semester but at this point, I just don't sign my emails at all and let them do what they want. 
 
I think that for some people, it's difficult to get comfortable with calling a professor by their first name.  When I started graduate school, it took me a good year to be able to do that, even though people asked me specifically, including professors from college.  Some even laughed when I called them Dr.!  Some professors I still call Dr. so-and-so, especially in more formal contexts.  It's an upbringing thing, and hard to shake.
