I'm a huge fan of Reisberg's Cognition text (Norton publishing), now in
it's second edition. Students really like it, and it's mid- to high
level in tone but quite accessible. One could take out several chapters
in the middle of the text setting up entrance of material into memory
and basic memory principles, and resume with conceptual organization.

Tipsters,
I'm on the hunt for a text, and would welcome recommendations. The
course is a mid-level undergraduate course called "Knowledge and
Thought", and it covers what's left of cognition after Language and
Memory have been hived off into separate topics. So it's a bit of
sensory processing, attention, imagery, concept organization, priming,
problem-solving, decision-making and a few other things. It's a
half-year (13 weeks @ 3 hrs/wk) course.
The last time I taught it (2002) I used Reed (5th ed), and the time
before Sternberg (2d ed). Both were... o.k.
Any gems out there I should know about?
