Fascinating stuff! Note also the small map at the top of the image,
which does the same thing state by state. Fully 23(!) states have German
as the largest ethnic ancestry. (And I suspect there would be more if
the ancestry of the "Americans" in WV, KY, AR, and TN.)

You may be right, Chris. My grade-school history was that many
residents of PA (a very German area) followed the Appalachian
mountains to the south.
Notice the one tiny bit of purple in NW North Carolina
identifying itself as English. That area is the home of the
Grandfather Mountain Highland Games, which a friend from
Edinburgh identified as being more Scottish than Scotland.
