With less 'sensitive' papers I just alphabetize them and pass them 
around. Otherwise I eagerly look forward to other ways, others have 
done it. 

Just brainstorming, if I had to, I would get a box of manila envelopes
with the students' names. Place them in the front of the room (or the back
but I'd have more control in the front) for a few minutes before and after
class, maybe in 2-3 alphabetized piles, and let students come up and empty
out their own envelopes/folders.
