Hi

I use Matsumoto & Juang's text for cross-cultural psychology and a number of 
sections include material on specific ethnic groups.  Other books on culture 
and psychology are similar, although that might require considerable digging to 
collect it all together.

One of the challenges, I think, in teaching such a course is what is the 
comparison group?  Is it Mexican American compared to White Americans (a 
heterogenous group that nonetheless is often treated with lots of differences 
all lumped together), other Latino Americans, other minority Americans, other 
collectivist cultures, ...  or is research on Latino Americans, other Minority 
Americans, other Collectivist Americans, ... relevant to understanding Mexican 
Americans?  Where are the important psychological boundaries between ethnic 
groups?  And what are the universal properties of all peoples?  A related 
question, I guess, is how homogeneous even are Mexican Americans?  There would 
be indigenous groups, for example, who might require special treatment.  And 
how do Mexican Americans compare to Mexicans?

A number of the cross-cultural books are organized much like Intro books, but 
with each section (perception, cognition, development, emotions, social 
psychology, abnormal, ...) focussed on cultural commonalities and differences.  
That might be one approach to take.

Sounds like an interesting challenge.
