You tried to send a challenge to "[EMAIL PROTECTED]", but it bounced, probably because there is no "smith" user at "spammer.com". The spammer just made up this envelope.
It is likely that the mail software at "spammer.com" is misconfigured and sends a bounce to your "reply-to" address instead of your envelope like it's supposed to.
You can't fix this, it's this third-party (not yours, not the spammer's) mail server that is doing the wrong thing.
You can mitigate this a bit by looking into using something like http://spf.pobox.com which MAY notify you if the sender is forged (only works if the admin at "spammer.com" published an SPF record).
You could also contact the admin of the domain "spammer.com" and tell them that bounces should be sent to envelope senders and not reply-to addresses... but they may not care or do anything about it.
If you get a lot of spam because of this, you could blacklist the "[EMAIL PROTECTED]" address so bounces from them are dropped.
