Dear Patti,
As a nutritionist who's also extremely sugar sensitive, my gut reaction is to 
stay away from sugar substitutes.  I can't give you any hard facts, but from 
what I've read and what I know about how the nervous system works (my nutrition 
education focused on how nutrition acts as a factor in mental/emotional 
problems), I would rather risk a migraine from consuming real sugar than mess 
with anything capable of affecting the nervous system, like aspartame (even 
though the particular studies I'm familiar with related to aspartame in soda 
that had been exposed to warmer temperatures).  This is just my personal 'gut 
feeling' for what it's worth.  
My suggestion would be to go with the real sugar, but work on cutting back.  If 
you have an intense craving for sweets, your problems may be related to an 
overgrowth of candida -  a whole other story.
