Good questions, all.  :)

1) Apache has a lot of processes, one is the root process used to bind to
port 80, the others are children ready to serve HTTP requests.  That's
normal.  The root process on 80 is the one attributed to user "root", the
children for request serving are the processes attributed to user "apache".
Most people use user "nobody" for Apache (nobody is a special type of
restricted user), but its not a big deal.

2) Yeah, those Java processes are normal.  They are all Tomcat.  To change
them from running as root, you want to create a tomcat user, and then do a
"su - tomcat", then start up Tomcat.  Once Tomcat is started, you can type
"exit" and go back to your regular user.  You'll want to make sure the
CATALINA_HOME tree and files are at least readable and executable by user
tomcat.  You should change the processes to run as a non-root user when you
can.  The less things that run as root on your system, the better.  Root
should always be an informed exception, never a lazy norm (not that you're
lazy, I think you get what I mean).

3) actually, from that process list you posted, Tomcat is running on boot.
You can see this by looking at the first "java" process.  It has a PPID of
1.  PPID = Parent Process ID, that is, the process that started it.  For
example, if you started Tomcat from a normal shell session, the PPID would
be the PID of your login session.  In this case, the PPID is 1.  1 is the
system init process, or the process that is in charge of starting everything
up on boot.  Your Tomcat has a PPID of 1, so it started at boot.  I'm not
sure what happened with you starting it afterwards, my guess is the one you
started by hand just failed without making a fuss and let the one that
started on boot keep going.
