Currently I have an external usb drive, on my mac mini, where I store
the music files.

I use iTunes to manage the content.

So, with a touch I could attach the usb drive to the touch.  The mac
can then be configured to see the drive on the network, and I can still
use iTunes to manage the music files ? (That is, my itunes music files
would be on the drive attached via usb to the Touch)
