Technically speaking it may be possible to do what you suggest. You would have to ssh into the Touch and set up the necessary mount commands. However, this configuration is not supported because is likely to be atrociously slow. When SBS scans the music library it creates a database of the metadata (albums, tracks, artists, genres, etc.) that is used for all subsequent operations. Normally the database is stored on the computer/NAS that is running SBS. The Touch cannot save the database locally, so it would be doing all interaction with the database over the network, which would be horribly slow. So for practical purposes, the answer to your question is "no".
