You can share the USB drive over the network and mount it to a drive letter on the PC and tell your ripping software to put it on that drive.
I would probably plug the drive into the Touch, wait until the server starts, then kill it before doing this. You probably don't want the server trying to scan files as you are writing them to the disk.
