You can do it, but I doubt very much that it will be faster.  The Touch
is a little CPU challenged and copying files to its drive across the
network tends to be slow, so I'd expect it would slow down the ripping
and encoding process.  Especially the encoding process if you're doing
FLAC and your ripping software places the interim WAV file in the
target directory.  That means the WAV file has to be written to the
Touch's drive, then read from it and then the resulting FLAC file
written back.  No less than three trips across the network.  And if 
your ripper runs the encoder in the background it will be writing the
next WAV file while reading the previous one and writing the resulting
FLAC file.  It could get ugly.

It will probably also crush the Squeezebox Server running on the Touch
while you're doing the rip.  I would rip locally then drag & drop over
the network if doing only a couple of albums.  It may be cumbersome,
but it would be much faster to just attach the drive to the ripping
computer when you have a lot of files to copy over.
