Thanks for the reply Jim. Yes, I'd read elsewhere about having each album in a single folder with a cover.jpg file in it, so that's what I'd done with the small test library that I started again with.
I had also been using the "clear library and rescan everything" option to clear the cache. But it seems you've hit the nail on the head with the thing about the Touch caching thumbnails - it was the thumbnail version of the artwork in the Artist > Album lists that was sometimes wrong. Once you got to the tracks on the albums with the bigger artwork it was OK. I did a quick reboot as you suggested and it all looked fine afterwards, so it does seem that the Touch is caching the thumbnails.
