As far as the Touch is concerned the filesystem type does not matter as
long as its one of
FAT32, NTFS. EXT2 or EXT3.

How that relates to Macs I have no idea. My guess is to just use
whatever works with the OS on the computer. 

As far as putting files on a USB device over the network goes, any
issues about not putting it on the disk are most likely an issue with
the network share software on the remote computer. The Touch exports a
SMB share with read and write permissions. 

When you say the Touch can't find the music, how do you know that? Does
it give you an error message? Are you someplace in the gui where you
expect to see songs and there is nothing? Exactly how you know it can't
find the music is very important to trying to debug things.

For example when you plug in the stick do you get the attaching USB
message? If yes do you see it scanning the files? If say you put 500
files on the stick do you see it finding 500 files during the file
discovery phase of the scan? If yes does it do a deep scan on all those
500 files? 

If it makes it through the scan and you go to Music Folder do you see
the directory structure you put on the stick? Can you see the music
files using the Music Folder access method? If yes what happens when
you select one? 

Information like that is very important to try and track things down.
