I would say that for standard CD resolution material (16bit/44.1kHz)
you will not hear any difference between the SB3 and the Touch.
However, that's not the whole story:

1) The Touch can handle high resolution files (24bit/88.2kHz and
24bit/96kHz) directly versus the SB3 which uses SoX to down sample the
higher bit rate files to bit rates that the SB3 can handle.

2) By using the built in TinySC the Touch can directly play audio files
from an attached USB device or SD card.

3) And then there is the nifty color touch screen.

Of course only #1 has anything to do with sound quality but if you have
any high resolution audio files (or are planning on acquiring some) then
the Touch has a very clear advantage over the SB3 and is, IMHO, well
worth the cost.
