Yes, there are separate builds of the SBS server for NAS devices. But the hardware specs of the NAS (CPU type and speed, ROM, drive speed, etc..) are very important for the functionality and stability of running SBS. A NAS is simply a stripped down computer, but if you strip out too much you can start to encounter problems while running a server type program like SBS.
