If you think that sound quality is not affected by server settings (which you dismiss as features) then you need to learn more about SBS. One simple example is the lively debate on whether you get better sound quality by decoding on the server or on the Touch, which is determined by SBS settings that you cannot access via the Touch. Once you start using SBS you'll learn more.
