If SBS is running on the laptop, then yes, you can plug the Touch
directly into the laptop. You WILL have to set a static IP address on
the Touch and the laptop (on the same subnet of course), unless the
laptop is setup as a DHCP server (which is extremely rare). If the
Touch tries to connect to a network without a DHCP server (direct to
the laptop) it will pup up a box for setting the IP address manually. 

You will need to set the IP address on the laptop as well, using
whatever method its OS uses for setting the ethernet port's IP address.
(for example you can set the laptop to 192.168.4.20 and the Touch to
192.168.4.25) (just randomly chosen numbers in the 192.168 space) DO
NOT make them the same!
