The problem is with the setup of the Onkyo. 
What files are you playing and why do you expect to have sound from
more than 2 speakers? - What "Listening Mode" on the Onkyo do you have
selected.
If you are playing NORMAL files on the Touch (ie stereo, up to 96kHz)
you  should be in the "Stereo" mode - see page 57 of the Onkyo manual.

As for the volume issue - check the IntelliVolume setting that adjusts
the relative levels of each input - see page 77 of your manual
