1: for accessing SBS on the sheevaplug you use a computer connected to
the same network the sheeva is connected to. On that computer use a web
browser to go to the page <sheeva_IP_address>:9000. This gives you pages
and a ton of menus for configuring the server and running players.

2: IF the plug you buy really does have an eSATA connecotr you could
connect a SATA drive to it with a SATA to eSATA adapter. 

3: no: eSATA will not hotplug. You would need to shut the system down
nicely and unplug the "PLUG" before disconnecting. 

If you plan on disconnecting a lot you will probably be better off
staying with USB. You will STILL have to unmount the drive before
physically disconnecting the cable or turning the power off. This is
done by logging into the Sheeva with SSH and running the appropriate
command. I would do this with a script that stopped SBS nicely then
unmounted the drive. 

These systems are pretty much designed to be left on all the time so
you don't have to worry about such issues. If the drive is formatted
with ext3 file system it can handle accidental unpluggs or power
failures quite nicely.
