The scan should not take anything like 8 hours - more like 40-60 mins on your hardware. That's problem number one. Can I just check the USB drive is connected to the PC, yes? (not directly to the Touch!). As for sound quality - you should aim to have the Touch volume quite high (75-100). There are no software settings that really change the sound - at least, the defaults should provide you with very good sound quality.
