Yes. And in the interests of full disclosure, in principle you could
connect the USB hard drive directly to the SB Touch and play your FLAC
files, using a "mini" version of SBS that runs on the Touch itself.
That would take your laptop out of the equation while still giving you
access to your local library of music.

I say "in principle" because the built-in SBS on the Touch does not
work well for a lot of people, which is why I didn't mention it in my
reply to your original post. It does work for some people. The
determinants of why it works for some and not others seems to be some
combination of the particular external USB drive used, the size of the
music library, the state of any album art in said library, the patience
of the user, the phase of the moon, and perhaps other factors including
dumb luck.

I suggest getting a Touch and trying it out as you described, using the
laptop to run SBS. If you like you can also experiment with connecting
the USB drive directly to the Touch and see if you are one of the lucky
ones.
