John,

dbPoweramp cd ripper is an excellent choice.  I've used that a lot, and
it's worth the money (pretty inexpensive as well for what it does).  I
usually rip to FLAC format which is kind of like mp3 but it doesn't
lose quality of the original cd.  The Touch like many high end audio
components support FLAC flawlessly, and FLAC is mostly known as the
digital archive standard amongst most audiophiles and music lovers.  So
expect each CD rip to be about 500 or 600mb.  So you'll need some space.
A few hundred gigabytes of storage will do (500 gig, 1TB etc...). 
External drives are good for that.  A suggestion I have is when you are
done ripping everything get another drive and backup all of your files
that are created from the ripping.  You don't want to rip 800 cds all
over again.  A spare external drive is probably the best bet.  Then
take it out every few months and add new albums when you get them
ripped and added to your collection.  I'm paranoid and have my 3000+ cd
collection backed up 4 times (heh).

Playlist creation is easy on the touch, just take some time getting
used to it how it sounds, works etc...  it'll be really fun.

Other than your main computer you'll need a router of some sort and an
ethernet cable for the touch (or if you have wireless in your place the
touch connects to the wireless network if you want it to instead of hard
wired).  I use hard wire to my router and have my computer on in another
room.  I prefer the hard wire to the router because sometimes the
wireless network in my house can't handle all the traffic in the air,
and the signal quality sucks unless it's pretty close.  Also for high
bitrate lossless playback a hard wire makes sure you have a stable
connection.

The Touch is awesome, have fun with it.
