Hi mraliman, one option is to download "SqueezeboxServer-7.5.1.exe" and install it to your (Windows-) PC as a server. If your touch connects to the PC it tells you, that there is an update (7.5.1) available. Another way (and easier) is to download the file "fab4_7.5.1_r9218.bin" from http://update.slimdevices.com/update/firmware/7.5.1/ and store it in the root of a SD-card or usb-stick. Insert it into the touch and choose software-update. Now you should see an available "update 7.5.1" .
