Some people say that turning off the screen (and turning off a lot of other things on the Touch, like wifi, multiple outputs, onboard decoding, etc) lightens the processing load on the Touch and therefore the Touch does a better job of processing the audio. Some people say they have no idea why turning off the screen would make a difference, but they don't care and just think it sounds better. There are probably other camps, but those are the main constituencies.
