Strange, I thought it would just connect and automatically load the
older firmware.

I've never used it, but you can supposedly place a copy of the firmware
on a USB stick or SD card (in the root directory) and the Touch will
update to it. You can download the current 7.5.4 firmware 'from here'
(http://update.slimdevices.com/update/firmware/7.5.4). Download the two
files 'fab4.version' and 'fab4_7.5.4_r9408.bin'.

There is a mechanism on the Touch for reverting to the previously
loaded firmware. Apparently the flash memory holds copies of both the
current and older firmware in case something 'really bad' happens.
However, this is likely to fix your problem only if the previous
version of the firmware was from 7.5.x. If it was also from 7.6 then
you're going to be in the same spot. To revert the firmware: On the
remote press and hold the volume up button while pressing and holding
the reset button on the back of the Touch. After 15 seconds or so you
should see a message on the Touch.

You could probably also go into the web interface's Settings > Advanced
> Software Updates and disable updates and downloads. This might
suppress the message on the Touch and allow it to connect to the
server. But you may not want to keep that setting if you want to be
notified of future updates.
