Yes, this should work very well with the Touch. For best results you should use Soundcheck's mods, they can make significant improvements in some USB implementations. Will it be better than S/PDIF? There is no way to tell. S/PDIF receivers vary wildly which can cause major differences even with the same source. The 2707->I2S will be better than some and worse than others. The only way to tell is to try it.
