A Harmony remote will be able to control the Squeezebox and any other
IR remote based equipment but it won't be able to display the artwork.

So, if I understand you correctly, you have two networks:
- One with Touch and NAS
- Another one which offers WiFi access to the iPod
If this is the case, and you can't change them so they are on the same
network, I believe you need a solution that allows you to enter the IP
address of the local SBS. This is possible in iPeng but I don't think
it's possible in the Squeezebox app. It will probably also work with
PlugPlayer, as it allows you to manually add devices, but that will
require either SBS 7.7 (which contains the UPnP plugin) or the third
party Whitebear Media Server (which only works if you are running SBS
on a Windows computer).
Feels like the easiest solution is to just get iPeng, it's only $10,
I'm sure you spend similar amount of money on other things without
thinking much and you use these a lot less than you will be using
iPeng. To make iPeng work, you need to open the necessary ports in the
router, but I'm sure you are already aware of this.
Depending on your network layout and routers/WiFi access points, it
might also be possible to change the network so everything is on the
same network but that's hard to know without further details about your
networking equipment.
