Yes this can happen. If you edit a file, then unplug the Touch you can loose the edit. When you make an edit, you are actually editing a memory buffer, when you save the file the cahanges do not automatically get copied to the "disk" (flash memory in the case of the Touch). In order to actually get the data into the flash you have to type either: sync or reboot sync copies the data from the memory buffer to the flash, at that point you can safely unplug the Touch. Or you can type "reboot" which will do the sync, then reboot without having to unplug. If you do the reboot your connection to winscp or putty or whatever will drop, you will have to login again after it boots up.
