As your server are dedicated to squeezebox use there will be no benefit. The performance as such are the same for 32 or 64 bit code. 64 bit gives you the option to address more memory and that can give you more performance if your program can exploit it; However squeezebox server does not.
If you look in the taskmanager I will guess that windows + antivirus + squeezebox server does not use more than 900 MB. But since it is a dedicated server you could look into: - stopping unneeded services - uninstall Flash and other not needed programs On my server I have 35 processes running.
