Once you remove the metal stand (two screws), you pry the front and back
panel of the Touch apart much like opening a laptop PC case.  Not
particularly difficult, but also not easy if you've not done it before
and don't have the right tools.

You might consider replacing the Touch with a Raspberry Pi-based player.
You have a USB DAC so the connection between the two is a standard
printer cable (USB Type A to USB Type B).  There are guides online on
how to assemble the player: it all snaps together, no soldering
involved.  Total cost including a metal case and power supply would be
under $100.  Sound quality is the same as your Touch.  Here's the rub:
for whatever reason, there are no RPi boards available anywhere right
now.

Anyway, if it comes to that, plenty of people here will help you get it
going.
