This is really cool!

I am currently trying to get a group of students (at a local University
to develop) a Java MIDP client for mobile phones (through 'industry
funding' the project).

How I image the UI for a client on a small device would look like is as
follows. I am currently thinking 5 screens as describe below.

StarMap (which lets you scroll around and then select
systems/planets)
Object Info (which tells you detailed information about the current
object)
Order (which lets you change orders on the objects)
Messages (which lets you read your messages and send new ones)
System Tree (which just gives you a tree like overview of the universe)

The "top level" (IE Screens which can be accessed without selecting
anything) screens would be StarMap, Messages and System Tree which would
open up to either Object Info or Order when you select and object.

The idea is to flow easily back and forth the screens as you will only
be able to display one at a time.

I envision the Starmap would work kind of like how tpviewer-pygame does.
Only the name and direction information for the object under the cursor
would be displayed at one time. This allows you to fit more of the
starmap in the window as you don't have to worry about things
overlapping as much.

Anyway just some thoughts...
