Hi, I have PageToPdf and CombineWiki installed. Both require HTMLDOC.
PageToPdf puts a link for PDF download on each page as CombineWiki can only be used from the Admin page. So for normal users this is a +1 for PageToPdf. CombineWiki can combine multiple pages, but this is basicly just putting each selected wiki page after another and a index in front. The layout of the PDFs cannot be changed with both plugins (or I don't know how ;), which is a major drawback for me. I haven't tried trac2latex yet.
