Well if you don't want everyone to see each other's projects, then you
might want to look at http://trac-hacks.org for private wiki and
private ticket plugins.  You could setup perms based upon project
while allowing your group to see all tickets.  Not sure what you would
do about milestones, maybe just hide them from everyone and use them
internally.  You could create a milestone for each project to trac the
time.
