IMHO, there should first be a honest analysis of what you REALLY need,
fields or else. A new system is a good oportunity to make things simpler.
then, there are some solutions to add custom fields to the standard. if
you can add one, you should be able to add more!

finally, the "presentation" , the view of the ticket is not carved in
stone, so someone more knowledgeble than myself shall be able to direct
you. I hope that there is no such limitation...
