I opened an account yesterday in order to learn more about Trac without
having to do all the administration stuff myself.  I want to see if Trac
can do the major things I need without have to invest a lot of time in
setting it up.  So far, I like what I see.  

I would suspect that cvsdude has created admin pages for the mainly used
features.  But if there is something that you want and it requires the
changing of a configuration file, you might be able to submit a help
ticket to them to change/add this feature for you.

That is what I have done to get the custom ticket fields I want.  I just
submitted the help ticket to add my custom fields, so I'll find out soon
how it works out.

So send them a help ticket and see if they can work this out for you.

do you find that you cant add wiki formatted bullet points (*) to your 
ticket descriptions?
Im wondering why, and if its something that might be able to be changed 
via one of the scripts that I dont have access to.
