I don't recall any ffmpeg known broken, except for unlucky and
unpredictable svn snapshots, so basically you can use what version you
want; please also note that real encoding is done by libx264: any
version greater/equal than 56 should be good.

Directly encoding from v4l source would be risky because the h264 codec
is 1) very cpu intensive 2) not optimal for later editing; you'll need
a FAST cpu or, better, a multicore cpu (even better: a fast multicore
cpu :))

PS: please update at least to 1.0.5
