Yes, thank you John.  I found it.  

In Vista:  Start > All Programs > Palm > PIM Conduit > and there you select
Sync with Outlook or Sync with Palm Desktop.  

I guess this means you can go back and forth, switching between the two if
needed?

Someone may be answering this even as I type but ... back in PalmDT 
4.x/Outlook2003, you could look in your Start/Programs/Palm menu and 
find an option that would switch the sync from DT to OL, whereupon next 
time you hotsync'd, it'd link to OL.
      In fact, that was how I switched from a Treo680 to a Treo Pro, the 
latter being WinMob and thus mandatorily an Outlook platform (until 
Google came along).
