Actually, I discovered for my particular case it turned out to be as simple as setting my mixer settings, then executing
% alsactl store


once to store the settings.  Voila!

Thanks for the tips though!

Still tinkering with the fortunes all being in Italian.. Removing fortunes-it didn't do it.. They're ALL in Italian, except for the Zippy ones.

Usually there's an alsa init script you have to add to bootup.
