Skype is closed source, and uses a proprietary protocol. Gizmo is closed source, but uses an open protocol. Ekiga, twinkle, et al are open source and use an open protocol. Asterisk is open source and allows routing of multiple protocols, including those spoken by open softphones and services. Continue on the progression of knowledge.
