UFW is really just a frontend for iptables, and you could just use iptables  
by itself to close stuff down.. Although honestly, that's a bit of royal pain  
in the ass. =x
I'd recommend you just install and use Firestarter, it has a nice gui and can  
"stealth" your machine.
