Try to move Xorg's configuration so that it is not considered: $ sudo mv /etc/X11/xorg.conf /etc/X11/xorg.conf.bak
You can then shutdown and restart the graphical connection (just quitting the graphical session) and see if "nouveau" is used.
I will take a look at your X logs now.
