Addressing point 1: the freedom to use the software for any purpose is not in  
any way violated by the installer downloading the packages. You can still run  
the program for any purpose. You can also download the package or use the  
source code for another purpose. This is not really a criticism; you are  
taking the words too literally.
Addressing point 2: the text installer (assuming you mean the Debian curses  
interface) does not have full disk encryption by this standard either.  
"Encrypted LVM" still creates an unencrypted /boot partition. You need to use  
the manual steps in the same way as in the regular installer.
Personally, I just want a stable OS which is supported for a long time.  
Trisquel 8 just needs to do Ubuntu, but without the nasty parts, so I can  
recommend it to friends and family.
Also, I'm thinking that GNOME Flashback may not be the default. I'm  
personally hoping for XFCE desktop environment by default. To be honest,  
keyboard shortcuts are overrated. Most people don't use more than the care  
minimum that are common across programs and operating systems so it's not  
really a pressing issue. Window managers, on the other hand, such as  
Ratpoison, make heavy use of the keyboard so that is where they are most  
important (disclaimer: I use Ratpoison).
