For the average Joe that only needs to check email, edit some documents and watch YouTube you could also help them towards web applications instead of locally installed versions. If everything they do is through a browser any way, the underlying operating system would be unimportant.

Obviously that wouldn't work for everyone. In my experience Mint and Elementary seem to be good "starter" GNU/Linux distros that don't need people to venture into the terminal very often. :)
