I've been missing this sort of documentation, as well, so started a
Tryton "book" at FLOSS Manuals, if you (or anyone else) would care to
contribute:

Currently I've just been adding the installation information from
Google Code, but hope to add some more user-related info (e.g. how to
enter a sale, enter a timesheet, etc.) shortly!
