Unfortunately, I'm not sure why it would only output to stdout.log. On the DreamHost servers (Debian Linux), I usually see that behavior when one of my tg_fastcgi processes is not working correctly (you can kill them using 'pkill tg_fastcgi.fcgi').
Alternatively, you might want to look at this tutorial - http://wiki.dreamhost.com/index.php/Django. I used that as a reference for setting up TG under FastCGI. Skip all of the Django-specific stuff and look at the troubleshooting section. If you can get the base example in that section to work correctly, then you can probably figure out what's wrong with your current installation.
